Monsieur Panino
 
  A classic Croque Monsieur with ham and cheese on griddled battered bread.  
     
     
 
  • 2 slices sturdy white bread
  • 1/4 pound thinly sliced ham
  • 2 slices Parrano
  • 2 tbsp butter
  • 2 oz. royale—see below
 
     
 
  1. Build the sandwich as follows: bread, cheese, ham, cheese, bread.
  2. Brush the entire sandwich with the royale, or dip the sandwich in a shallow dish of royale.
  3. Heat a large non-stick sauté pan until hot, add 1 tbsp butter and when bubbling add the sandwich. Cook 2 minutes until golden brown, flip the sandwich over and add remaining butter and cook another minute or two.

Royale
Whisk 1 cup light cream with 2 eggs and a generous pinch of salt and store cold. Will make enough royale for 4 sandwiches.
