Parrano Cubano
 
  Pressed and griddled sandwich with smoked ham, Parrano and pickles.  
     
  Traditionally this sandwich is made in a press using a soft Cuban roll and shredded pork and ham. Mayonnaise and pickles are always included and sometimes hot peppers are added for an extra kick…  
     
     
 
  • 1 soft roll-a Kaiser roll or even a sturdy hamburger bun for example
  • 1 tbsp mayonnaise
  • 1 tbsp sliced garlic pickles
  • 1/4 pound very thinly sliced or shredded black forest ham or similar
  • 2 slices Parrano
  • Optional-sliced jalapenos or peperoncini or other hot peppers
  • 1 1/2 tbsp unsalted butter
 
     
 
  1. Open up the roll and spread both sides with mayonnaise.
  2. Arrange the sliced pickles over the bottom. Place one slice Parrano over the pickles and add the ham/pork over the cheese. Add the hot peppers over the pork, if using and top with the second slice of Parrano.
  3. Spread the butter over the outside of the roll and either cook in a sandwich press, or on top of the stove like a grilled cheese. Another way to cook is to place the buttered sandwich on a baking sheet and then weigh it down with a second baking sheet and cook in a hot oven for 10-15 minutes. Serve hot.
