Orgouda Salad
with Ham, Green Grapes
and Nut Dressing |

- 7 oz Legendairy Orgouda (Gold or Mild), sliced
- 7 oz ham, sliced
- 8 3/4 oz seedless green grapes
- 3 1/2 oz unsalted cashew nuts or pecans
- 1 1/2 tbsp olive oil
- 1 tbsp fruit vinegar or apple juice
- 1 Grated apple
- Oak leaf lettuce or red (frisée) leaves
- A few sprigs of mint or parsley

Cut the ham into broad strips. Halve the washed grapes. Roughly chop half of the nuts and toast the other half in a dry frying pan. Add the sliced Orgouda, the ham, grapes and the chopped nuts. Stir a dressing from the olive oil, vinegar and grated apple. Mix the salad in the dressing and arrange on the lettuce leaves. Garnish the salad with the nuts and mint or parsley.
